A classic watermelon agua fresca (agua de sandía) is made by blending 4 cups of cubed seedless watermelon with 2 cups of cold water, 2 tablespoons of fresh lime juice, and 2 to 3 tablespoons of sugar or honey, then straining the mixture into a pitcher.

Cooking time: 5 minutes
  • 4 cups watermelon (seedless)
  • 2 cups water
  • 2 tablespoons lime juice
  • 3 tablespoons Sugar (can use honey or agave nectar, to taste)
  •   ice cubes
  1. Combine the cubed watermelon, lime juice, sweetener, and 1 cup of cold water in a blender.
  2. Blend on medium speed for about one minute until completely smooth.
  3. Pour the blended mixture through a fine-mesh strainer into a large pitcher to remove pulp, pressing gently with a spoon and discarding the solids.
  4. Stir in the remaining 1 cup of cold water, taste, and add more sweetener or lime if needed.
  5. Refrigerate until chilled or serve immediately over ice.
