Alfredo sauce is a rich, creamy cheese sauce made with butter, heavy cream, and Parmesan cheese.

  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1 1⁄2 cups grated Parmesan
  • 1 egg yolk
  •   pinch salt
  •   cracked black pepper (to taste)
  1. Melt the butter in a saucepan over medium-low heat.
  2. Whisk in the heavy cream and bring the mixture to a gentle simmer.
  3. Gradually stir in the grated Parmesan cheese and a pinch of nutmeg and salt (start light with the salt, as the cheese is already salty).
  4. Whisk in the single egg yolk to stabilize and thicken the sauce if desired.
  5. Simmer for 3 to 5 minutes, stirring constantly, until the sauce coats the back of a spoon.
  6. Remove from heat and serve over hot fettuccine or your favorite pasta.
